Meet Maurice Chriss of Traverse city

Today we’d like to introduce you to Maurice Chriss

Hi Maurice, so excited to have you with us today. What can you tell us about your story?
– job that made me fall in love with the art of cooking was Byers hot dogs in chicago
– GM Justice culinary arts school got associate degree in culinary arts
– head chef at Maddy’s tavern
– most notable work state street grill downtown traverse city for three years.
– I started creating formulas and understanding how flavors worked together “I said what’s next?”
– My mentor told me “make burgers great that’s what you do” that’s what I’m known for making better burgers
– worked for Bradley’s pub and got into smash burgers, but it wasn’t enough i got a truck and started doing smash burgers because nobody in traverse city was doing smash burgers at the time
– My mission and goal are to make customers happy through food.
– “I want my food to be recognized by everyone in this city”
– over 27 years of experience in the culinary industry

We all face challenges, but looking back would you describe it as a relatively smooth road?
opening a business definitely has its challenges, but perseverance is key to overcoming any boundaries I may cross. a good example i can think of is at the beginning of this season our health permits didn’t arrive in time for opening weekend at the little fleet so it put us behind schedule, but we didn’t let that discourage us from having the busiest summer yet.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
At moe’s we specialize in keeping it simple. smash burgers and fries (our onions rings are also a fan favorite) are what we’re known for. nothing beats a classic burger. what i’ve found is it really doesn’t take any fancy ingredients to impress people you just have to be proud of every burger you make. a little seasoning goes a long ways you’d be surprised
