Hi Hannah , we’d love for you to start by introducing yourself.
We (Eric Speth and Hannah Snow) first worked together in Copper Harbor, MI, managing a campground, lodging, bar, and restaurant. During that time, we realized how well we worked as a team. After leaving Copper Harbor to pursue other opportunities, the idea of creating something together kept coming back to us. When the timing finally felt right, we decided to launch our own business: All Rolled UP. Sitting down to plan those first steps was an exhilarating moment.
I (Hannah) grew up in Marquette but spent time living in Alaska, Colorado, and Copper Harbor before returning home. During my twenties—often on a shoestring budget – I developed a deep love for cooking. I also became passionate about the idea of breaking bread with friends, family, and even strangers, and the unique connection that comes from sharing a meal. All of that, plus a creative Thanksgiving leftover egg roll concoction in 2015, became the seed for All Rolled UP.
I shared the idea with Eric during our Copper Harbor days, and together we shaped it into something bigger. What started as a fun daydream became the foundation for what we’re doing now.
Eric grew up in the suburbs of Detroit but fell in love with the Upper Peninsula in college. It quickly felt like home, and building a life here was a goal of his.
In 2022 and 2023, we dedicated ourselves to planning and preparing to open All Rolled UP, which debuted in summer 2024. That first season was a huge learning experience – we connected with local business owners who mentored us, developed recipes to offer something unique to Marquette, and navigated the challenges of starting a business. Despite the ups and downs, it was an incredible year.
Now in our second season (summer 2025), we’ve added staff, introduced rotating weekend specials, and continue to grow. Looking ahead, our goal is to expand our services and keep creating delicious, memorable food experiences for the Marquette community and visitors alike.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
We’ve definitely been fortunate in many ways, but it hasn’t been without challenges. Even with our background in running a business, there was still a huge learning curve. We had to tackle everything from large-scale recipe development to figuring out how to prep and operate efficiently in a food truck—very different from a standard kitchen. And honestly, that learning never stops. Even now, we’re constantly troubleshooting, refining our processes, and looking for ways to make our food and operations even better.
As you know, we’re big fans of All Rolled UP. For our readers who might not be as familiar what can you tell them about the brand?
We’re a food truck based in Marquette, MI, and our specialty is creative, flavor-packed egg rolls. We take inspiration from all kinds of dishes and cuisines, then put our own twist on them – by wrapping them up and frying them to perfection in an egg roll! Everything we serve is made with care, and most of it from scratch – from our house-cured corned beef to our signature BFG dip, a whipped blend of beets, feta, and garlic. That dip has become quite popular – customers often ask to buy extra to take home, and we’ve even converted some self-proclaimed beet haters into fans!
What sets us apart is the experience we create. While egg roll fusion isn’t a brand-new concept, it’s something unique to this area, and people love the creativity and variety. We’re proud to offer something fun and flavorful that locals and visitors can’t find anywhere else in the UP. Partnering with local breweries has been an amazing way to round out that experience—there’s nothing like pairing a Marquette-made beer with a Marquette-made egg roll.
Any big plans?
Our main focus right now is fine-tuning everything we do – making sure each season gets better than the last. Looking ahead, we want to expand what we offer and continue giving the community something fun and delicious to look forward to. One big goal on the horizon is securing a commissary kitchen. That would give us the space we need to prep more efficiently, which means we could be open more often
