Hi Joe, we’d love for you to start by introducing yourself.
Four Star Mushrooms was founded on the core principle that we need to transition to a regenerative agriculture system, and that mushroom cultivation could play a keystone role in accelerating that transition. I started the company in 2019, after more than a decade of being interested in and learning about our ecological systems — how they function and where they break down. During that time, I learned that agriculture is the largest driver of land-use change and carbon emissions. I also learned that most of the crops we grow aren’t food for people, and that the monocultures they’re grown in destroy ecosystems, reducing our ability to manage water and pests while diminishing biodiversity. Add to that the facts that 30–40% of food is wasted and that Americans are overfed and undernourished, and it becomes clear that regenerative agriculture is the answer to the woes of our industrial food system. In 2018, I learned about the amazing fungal world — specifically, how the cultivation process could be leveraged to grow nutrient-rich food indoors year-round while generating highly valuable soil amendments and feedstock for insects, both of which can be used to build soil health and ultimately help us grow more regenerative food.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It has not. Building Four Star Mushrooms continues to be the most challenging thing in my life. We push hard to grow the most premium-quality mushrooms, which means doing things the hard way a lot of the time. We don’t cut corners. We design our systems to be resilient. We train our team to be evangelists of quality, and we do the same with our chef customers. We are a small business made up of passionate individuals grinding away to build a better food system for everyone.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I am one of two co-founders of Four Star Mushrooms. I have committed my life to accelerating the transition to a more regenerative food system. We currently do this through the cultivation of mushrooms, but we will be growing all types of food as we expand our business, footprint, production, and distribution. I am most proud of our company’s mission and how much it resonates with people. We find that people from all walks of life understand what we are trying to do and can get behind it. Everyone has to eat!
What do you like best about our city? What do you like least?
I think Chicago is a world-class city. We have one of the most vibrant and creative food scenes in the world, and it is an honor to play a small role in menu creation and the guest experience. I do wish the city government were more fiscally responsible and cared more about public safety and law enforcement, since we find that people hold negative perceptions of our city because of crime.
