Today we’d like to introduce you to Erin Sees.

Hi Erin , it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My name’s Erin and I am the owner and operator of St. Clair Shores’ latest and greatest gourmet grilled cheese food truck, The Cheese Pull.
You may have seen us popping up around town at a couple of the Downtown St. Clair Shores Social District events or at Baffin Brewing Company or maybe even Copper Hop Brewing Company!

I first opened the window on February 7th, 2025 after months and months of planning, preparing, and absolute agony while waiting for my trailer to arrive.
After the first 3 months of planning, the paperwork to apply and the inspection process took another 3 months to complete while I was still working a full time catering job.
Which leads me into a little bit of my background!

I have worked in kitchens since I started working at 14. I started as a fry cook at Arby’s, continuing on to my 9 year stint with the Grosse Pointe Public School System as Production Manager, 4 of those years also spent working full time on the Infinity & Ovation Yacht Charters as the only female Galley Chef, which really sparked my love for cooking so I then enrolled into Culinary School, then onto a few odd jobs during the Covid outbreak, and then to my last job as a sous chef for one of Metro Detroit’s biggest catering companies, before finally diving head first into my food truck journey.
And MAN, what a journey it has been!!!
I have learned more about myself, my determination, and my work ethic than I ever thought possible. And this is only the beginning!
I get so excited thinking about what the future has to hold for me and my lil trailer and I couldn’t do any of it without the help of my parents and my very best friend.
I will always show up with my best foot forward and continue to bring the freshest, highest quality ingredients that the Metro Detroit area has to offer and always, ALWAYS make your sandwich with all of my love!!

We all face challenges, but looking back would you describe it as a relatively smooth road?
Starting a business certainly has its challenges but I wouldn’t change it for the world. Each struggle, every set back, every hard day that I have gotten through has shown me exactly why I decided to quit my 9-5 and create something that is all my own.
The menu creating, food prep, finding the right suppliers, etc. has been the most rewarding part of this entire journey. My biggest struggle I would have to say is keeping up with all of the paperwork associated with running a food truck and maintaining the proper permits and licenses. Finding people who are knowledgeable and experienced in the food truck industry has helped me tremendously!

Can you tell our readers more about what you do and what you think sets you apart from others?
I am a self-trained chef, and I started a gourmet grilled cheese food truck in February of 2025, called The Cheese Pull.
I specialize in elevated comfort food, with grilled cheese as the star. I am known for creative, indulgent foods and nostalgic flavors. My food is familiar, comforting, and a little over-the-top — but done right.
I am most proud of the focus that I have, not on building a huge, extravagant menu, but instead on the quality of ingredients used, and quality of the sandwiches that I serve to the public every day!
My small, seasonally rotating menu is what I believe sets me apart from other food trucks. I have a select few choices, making it easy for families to find something that everyone in the family can enjoy!

Networking and finding a mentor can have such a positive impact on one’s life and career. Any advice?
Networking is so important when starting a brand. Knowing who to talk to is incredibly important, but knowing what to ask is even more important. The one thing that has helped me the most is keeping a notebook with me everywhere I go. Writing in the notes in your phone works just as well. The idea is to write down ANYTHING that comes to mind. For example, I am most inspired when walking around the grocery store. Seeing all the different ingredients gets my mind working and coming up with new ideas, new questions to ask those that I consider a mentor, and having my notebook with me helps keep all of my thoughts straight and clear.
