Today we’d like to introduce you to Eric Kraus
Hi Eric, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
My wife is from Thailand and is an amazing cook. All of her friends always want her to cook food for them and even go as far as bringing food over for her to cook for them (unannounced lol). We have talked about opening a restaurant but the overhead is just too much, so we started discussing a food truck instead. One day last year I told her “You know what? Let’s do it! Let’s open a food truck.” So we started selling food to coworkers and friends to see what people liked and what we wanted to use in our menu, and soon after we ordered our food truck. Four months later, here we are, up and running and introducing people to her delicious food! My wife gets all the credit because without her gift, this wouldn’t be possible.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
There have definitely been challenges lol. From changing from our original builder halfway through, to our current trailer needing a lot of corrections, even though it was a brand new trailer. Other than that, it’s been a pretty quick ramp-up to get up to speed and get the ball rolling. My wife has gotten very efficient, very quick, and can knock out a meal in, on average, 4-5 minutes.
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
We are an (actually) authentic Thai cuisine food truck. We specialize in authenticity and flavor. Everything on our menu is homemade, from the spring rolls to the Pad Thai sauce, nothing is store bought. What sets us apart is my wife’s passion for perfection and presentation, and it shows in her food. There is nothing on our menu that you won’t say “This is the best I’ve ever had”. I say that, not only from confidence, but from experience.
What was your favorite childhood memory?
(From my wife) Growing up in a small village, we didn’t have much more than the necessities, so when my sister saved up some money and took me to the beach/ocean for the first time when I was around 9 years old, it was an amazing experience. That, I’d have to say, is my favorite childhood memory.
