Hidden Gems: Meet Daren Palacios of Songbird Provisions

Today we’d like to introduce you to Daren Palacios.

Hi Daren, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Songbird Provisions really got started in 2023, in Grand Rapids, but was a culmination of a couple brands that I started previously. Shaker & Swine was the first brand where we did pop-ups, private dinners and ticketed events. When COVID happened, Shaker kept up with pop-ups but I also launched Taco Mule which was a late night taco pop-up at bars that didn’t have food. Once COVID was over, I decided that I wanted to put all brands, concepts and menus under one brand where I’d do everything and that was Songbird.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
I don’t know if I’d say it’s been smooth but it has been and still is a lot of fun. Finding spots to pop-up, lugging all of the food & equipment, being my own marketing team, dealing with COVID, pivoting for COVID, then moving from GR > Detroit > Leelanau County…. It’s been a ride. That all being said, I love what I do, so it’s all been worth the hustle.

Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
Songbird is a pop-up concept where we cover the whole spectrum when it comes to food. We do pop-up events all over the county featuring different themed menus based on what we feel like cooking. We also do in home catering and ticketed dinners with multiple courses. That covers savory but if you like sweets and baked goods, we sell an array of them at Leelanau Coffee in glen arbor. You can get things like buttermilk biscuits with honey butter to cookies, coffee cake and our perfect cinnamon roll.

Our food is elevated high-brow and low-brow food, focusing on exceptional ingredients treated with respect, love and sparking nostalgia.

I’m most proud of what we do for always staying true to who we are and what we create. We were 100% us all the time. The food and the vibes we create highlight that.

We love what we do and really enjoy getting to know the community. We are always booking events and private dinners outside of our pop-ups so anyone interested can reach out via email at hithere@songbirdprovisions.com.
