Today we’d like to introduce you to Briana Willis.
Hi Briana, we’d love for you to start by introducing yourself.
About 12 years ago, my middle daughter was diagnosed with Celiac Disease, an autoimmune disorder that requires following a strict gluten-free diet. I had to do a ton of experimenting in the kitchen to convert our tried-and-true family recipes and make them gluten-free. I would host holidays because it was just easier to keep her food safe. No one knew it was all gluten-free. I said to myself food can be free of gluten and still be tasty.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way? Looking back, would you say it’s been easy or smooth in retrospect?
There have been many obstacles and challenges. I was a complete novice in how to start a business, registering with the state, obtaining a food license, and following the rules along the way. We hit bumps, but with my husband helping, we just kept moving forward. I tested the market at Local Farmers’ Markets started hosting pop-ups and classes. And the demand has just grown and grown to the point that I moved into my own workshop.
Can you tell our readers more about what you do and what you think sets you apart from others?
My specialty is gluten-free cakes, pretty ones that you can be proud to serve. They taste so good that your guests don’t know they’re eating gluten-free.
I like to help people create beautiful presentation pieces for their special events-weddings, baptisms, showers, etc. with an artsy flair.
Is there anyone you’d like to thank or give credit to?
My family are the ultimate taste testers. We are definitely a family business. Before I got into a shop, my kids helped with deliveries. They help make boxes, and my husband picks up supplies, maintains equipment, and keeps the shop squeaky clean.
Heather from Sweet Heather Anne has been so helpful with offering local workshops to learn new skills. I am forever grateful for her generosity in sharing her exceptional artistry.
