Hi Buck, we’d love for you to start by introducing yourself.
I started with a grill and a passion to do something different something that gave me real, intrinsic satisfaction. I wasn’t chasing trends or gimmicks, I just wanted to build something cool. . I began by renting a small local spot for about six weeks, just to test the concept and get my feet under me. That’s where Buck N Dink’s first took shape.
From there, I moved into a food truck. That took time to get right, learn the logistics, operations, and especially understanding that in this business, time is your most valuable commodity. Every minute matters when you’re dealing with preparing food and tight windows.
We eventually got a place in Mount Clemens strictly as a prep kitchen to support the food truck. But over time, it grew into something more. We now operate a small to-go storefront there, open Fridays and Saturdays, where we serve a limited menu until we are sold out. It’s a way for us to connect directly with local customers, outside of large-scale events.
Our core business is catering. We focus on weddings, graduations, corporate lunches, and really any kind of celebration where people want to gather over great food. The storefront gave us a new lane—to serve individual customers and build community, one plate at a time. We’re always looking ahead, and while we’re keeping things focused for now, there’s definitely more to come.
We’re now expanding into prepackaged meats so our customers can enjoy Buck N Dink’s BBQ at home anytime they want it. After hearing from so many people who wished they could get our brisket, pulled pork, or smoked chicken outside of our limited hours or events, we decided to make it happen. Our prepackaged line features the same slow-smoked, hand-crafted quality we serve on the truck and our storefront, vacuum-sealed and ready to heat and eat. It’s perfect for busy families, weekend gatherings, or anyone who wants real barbecue without the work. This new direction lets us bring our flavors into homes across the area and eventually, hopefully more.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
No, it hasn’t been a smooth road, but that’s what makes the journey real. Like a lot of small business owners, I started without a roadmap. The first major challenge was learning how to operate a food truck efficiently. It’s not just cooking; it’s logistics, permits, staffing, breakdowns, weather, you name it. I had to learn fast and make a lot of mistakes along the way.
Time management was another big one. When you’re running a business that relies on early prep, late events, and tight margins, you quickly realize your most valuable asset is time, and how easily it can slip away if you’re not organized. We’ve also faced challenges with growth. Turning our prep kitchen into a functioning storefront meant investing money, learning new systems, and operating with a whole different mindset.
But through it all, we’ve pushed forward. Every obstacle has made us better, more resilient, and more focused on what really matters: serving great food and taking care of our customers.

We are a veteran-owned barbecue business based in Mount Clemens, Michigan. We specialize in slow-smoked meats, Southern style catering, and creating unforgettable food experiences through our food truck, to-go storefront, and now, our new line of prepackaged BBQ meats for home preparation.

If you had to, what characteristic of yours would you give the most credit to?
The most important quality behind my success has been consistency, reliability, and teamwork. In barbecue and in business, you can’t do everything alone. I’ve learned that surrounding yourself with people who believe in the vision is just as important as the vision itself. My wife has been my rock through all of this. She’s not only the best partner in life, she’s the best partner in business. From the late nights to the early mornings, she’s been right there helping keep this thing moving. That kind of support, combined with a shared work ethic and trust, is what keeps us strong. Consistency, teamwork, reliability, and family.
