Community Highlights: Meet Shawn Eric Wright HItchcock of Little Lou’s Hot Chicken

Today we’d like to introduce you to Shawn Eric Wright HItchcock.

Hi Shawn Eric, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
We both come from working years in the hospitlally industry. Eric has been general manager at many restaurants and I (shawn) am a chef background. Eric and I worked at a corporate restaurant group when we came up with the idea of Little Lou’s. I came back to metro Detroit from Nashville and was like, there is no hot chicken really in Michigan. We both said, well you know the front of the house, and I know the back, what a great team we would make and lets bring this concepts together. After months of talking about it, we said lets start off as a food truck to get some tractions. Well, after 6 months we grew out of that truck and really had no space to prep. Lets get a brick and mortar! In April of 22 we open our first location in berkley,.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Restaurant industry is never a smooth road. Each location we start, there is some hurdles to jump. Finding staff and key players can be a struggle at times, rising food costs, etc.. but we both have been doing this a long time and know how to overcome everyday restaurant struggles.

As you know, we’re big fans of Little Lou’s Hot Chicken . For our readers who might not be as familiar what can you tell them about the brand?
We are a chef driven hot chicken shop, making everything from scratch, even blending our own flour mix in house. We keep our menu small so we can focus on quality. The restaurant is named after out kids, we both have boys names Lucas, so we said lets call it Little Lou’s. We have locations in Berkley, Fenton, and soon to be Downtown Detroit (shooting to open first week or two in July)

What matters most to you?
Our whole brand is based of food quality and hospitality. We strive to use the best products, cook everything to order to make sure we are giving you our best. Taking care and knowing our customers is Eric’s bread and butter. We make everyone feel like an old friends.
