Inspiring Conversations with Kris Davidson of Elliotts Bakery and Coffee Shop

Today we’d like to introduce you to Kris Davidson.

Hi Kris, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
Elliott’s Bakery opened in July 1931. We purchased the bakery 7 years go. We carry on the same strong traditions of 1931 and have added some new bakery items. We also added a full espresso bar, offering all the boujee delights. Elliott’s Bakery and Coffee Shop is a full service bakery offering fresh donuts, cookies, pastries, bread, pies, and cakes daily. We specialize in wedding cakes, graduation cakes, and birthday cakes. We have a donut wall to rent for special events. We also have a coffee trailer available for special events complete with an espresso bar and customized baked goods.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Our biggest struggle has been the drastic increase in inventory costs, especially eggs. Everything we make has eggs in it. We cannot possible increase our prices at the same level as the increase in our inventory. We have just taken the loss in profits. Also the new Earned Sick Time Act that went into effect February 21. 2025 forces us to pay sick leave time to all employees. This is a several thousand dollar cost to the business each year.

Alright, so let’s switch gears a bit and talk business. What should we know?
Elliott’s Bakery and Coffee Shop is a full-service bakery and coffee shop. We offer dine-in and carry-out options as well as delivery and curbside take-out. We make fresh baked good daily from scratch using the same recipes since 1931 when the bakery opened. We are best known for our chocolate Long Johns, made daily from scratch with homemade chocolate buttercream filling and chocolate icing. The secret to our delicious chocolate filling and icing is the Swiss fudge base. We offer a full espresso bar, as well as fresh baked goods made daily including donuts, cookies, cakes, pastries, breads, pies, pepperoni rolls, cinnamon buns, and much, much more.
