

Today we’d like to introduce you to Javier Bardauil
Hi Javier, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I started cooking because I like to entertain, and soon I learned that food was key for that, but I never thought of doing it as a profession.
At the edge of 22 I had a motorcycle accident where I lost a friend and my life was put in pause for a year, not knowing if I could walk again.
That experience got me thinking about what I really wanted to do with my life before I died, so I left the university and I enrolled to culinary school. Then my journey as a young cook full of passion began and never stopped. I’ve been cooking for 30 years and it has been like playing the whole time! My life is incredibly, full of adventure, full of purpose, a very strong experience.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Smooth is the opposite of what you are gonna face in this industry if you want to learn and push yourself forward to the unknown. Uncertainty is a constant part of growth as a chef and only embracing it is the way that works for me. Jumping to the abyss requires a strong commitment and a strong belief in yourself, and sometimes, the outcome is not the expected but you can turn those experiences into lesson that make you grow. The lack of personal and family time are part of the struggles that I face in my profession.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
I’m a chef and in my restaurants we only cook over wood fire. This method and its techniques are in a truly juxtaposition of modern life, allowing us to have a conversation with the primal mind of our guests, making them experience ancestral emotions.
I’m very proud of our team who are always on top of every single detail of creating unforgettable memories for our patrons.
