

Today we’d like to introduce you to Becky Collins
Hi Becky, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
I graduated from Michigan State University with a bachelors in Communication and began managing a chain restaurant. Went to Oakland University and received my MBA while also starting my young family.
In an effort to improve my health, I made a (unknowingly at the time) lifechanging decision to try becoming vegan. I learned more about why other people turn to veganism and found myself able to relate to all those reasons, particularly the environmental factors. It also became quickly apparent that there were not many options for a vegan person dining out in the area.
Cooking vegan meals at home was an exciting challenge to recreate the same meals we’ve always enjoyed. After years of perfecting recipes and techniques, friends and family complimenting the food that “doesn’t even taste vegan”, I quit my job to pursue my dream. To provide delicious, homemade meals without using highly processed ingredients to the vegan crowd near me. And also, to change attitudes and opinions about vegan food.
Vedged Out! food truck opened in July ’22 and has been growing steadily ever since. Fare includes favorites like the Buffalo Cauliflower Wrap, Nacho Queen, Mother Clucker and Chickpea Fries. Menu is seasonal and rotates items in and out each month. Vedged Out! aims to eventually open a brick and mortar location to provide year-round service.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
I live in Michigan, of course the road was bumpy!
There were the typical struggles like figuring out what menu items work or don’t work, which marketing strategy was a fail, getting scammed by fake event promoters. And with a mobile food unit there are constant equipment failures and issues. You have to be prepared for anything!
The other struggle was being “the vegan food truck” at events. A lot of people can be scared to try something different from the traditional taco or bbq trucks they’re used to seeing, even if those food options are inferior.
We’ve been impressed with Vedged Out!, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Vedged Out! is known for our quick, friendly service but especially for our variety of dishes that even meat-eaters enjoy. We primarily serve lunchtime handhelds but also offer brunch service, complete holiday meals to-go, and catering.
In 2024 Vedged Out! won the “People’s Choice Award” at the Eat Healthy, Eat Local event. The first vegan truck to win the award and 1 of only 2 fully vegan trucks of the 26 trucks participating in the event. Vedged Out! also won a “Best of the Best Award” for 2024 vegetarian food voted on by the Clarkston News.
